- 225g self-raising flour
- ½ tsp mixed spice
- A pinch of salt
- 115g cubed, chilled butter
- 75g caster sugar
- 75g sultanas
- 1 egg
- Caster sugar, to decorate
Sift flour with mixed spice and salt. Rub in butter until it resembles breadcrumbs.
Stir in sugar and sultanas and a lightly beaten egg to make a dough.
Roll out to 5mm thick and cut into 6cm rounds.
Cook on a lightly greased griddle for 3 minutes on each side or until golden. Sprinkle with caster sugar to serve.
