Ingredients
  • 225g self-raising flour
  • ½ tsp mixed spice
  • A pinch of salt
  • 115g cubed, chilled butter
  • 75g caster sugar
  • 75g sultanas
  • 1 egg
  • Caster sugar, to decorate
Method
  • Sift flour with mixed spice and salt. Rub in butter until it resembles breadcrumbs.

  • Stir in sugar and sultanas and a lightly beaten egg to make a dough.

  • Roll out to 5mm thick and cut into 6cm rounds.

  • Cook on a lightly greased griddle for 3 minutes on each side or until golden. Sprinkle with caster sugar to serve.
