Ingredients
  • 1 whole salmon, gutted and scaled
  • 2 oranges, sliced
  • 1 onion
  • Bunch of dill
  • 1 tbsp Olive oil
Method
  • Preheat oven to 200C/400F.

  • Grease a large sheet of greaseproof paper with olive oil and place on a tray.

  • Slice the oranges and onions and line up, overlapping on the tray.

  • Lay the whole salmon on top of the oranges and onions. Score the salmon skin and add the dill to the inside.

  • Season with black pepper, salt and an optional drizzle of olive oil.

  • Oven cook for half an hour.

  • Slide off the grease proof paper onto a serving dish.
