Showstopping whole salmon
- 1 whole salmon, gutted and scaled
- 2 oranges, sliced
- 1 onion
- Bunch of dill
- 1 tbsp Olive oil
Preheat oven to 200C/400F.
Grease a large sheet of greaseproof paper with olive oil and place on a tray.
Slice the oranges and onions and line up, overlapping on the tray.
Lay the whole salmon on top of the oranges and onions. Score the salmon skin and add the dill to the inside.
Season with black pepper, salt and an optional drizzle of olive oil.
Oven cook for half an hour.
Slide off the grease proof paper onto a serving dish.
