- 25g pack Grower's Selection Mint
- 1tbsp demerara sugar
- 1 lime, halved
- 50ml white rum
- 200ml Alpro Coconut Original
- 30g pomegranate seeds
Reserve a few leaves from the bunch of mint and put the rest in a cocktail shaker. Muddle with the sugar and lime. Add a few ice cubes and rum and shake for 2 mins.
Fill 2 highball glasses with ice and strain over the rum mixture. Top up each glass with the coconut milk and sprinkle over the pomegranate seeds. Decorate with the reserved mint leaves and serve.
